Now that spring has finally arrived, what am I doing? Getting ready for summer, of course!
It is the perfect time to clean off the grill and make sure the gas tank is filled--and a nice side dish is also welcome.
This weekend, we worked on this salad. Good for a picnic or get together; the recipe is simple.
Cook some pasta. Ours is gluten-free.
Cut up vegetables. In our case it was radishes, cherry tomatoes, chopped snow peas, celery, red peppers and green onions.
Add some feta cheese. Pour on Italian dressing of your choice (Ken's is gluten-free). Toss and chill for at least four hours and serve.
This is perfect for a cookout. We had grilled pork tenderloin. Summer IS just around the corner!
