Souper book



I am looking for a few good soup recipes -- with conditions. The recipes must be low in calories, high in nutritional value and MUST also taste good. Impossible? Maybe, but I will try in January and February to see if that recipe exists. It may not be a "crowd-pleaser" but I will surely come something that my family will eat without groaning.

The first book I took off the shelf was this book by Robin Robertson, Fresh from the Vegetarian Slow Cooker.


Actually, it had a recipe I had to try right away, for slow -- cooker beans. It also has some soup and stew recipes I will be trying, but so far, nothing that makes me really excited. I have tried the Beans Bourginon recipe in another cookbook by the same author, but not the slow cooker version. I did like the recipe, cooked traditionally so I probably will like it slow cooked.

I also know I really like lentil soups and stews but I am usually disappointed in lentils cooked in the crockpot because they are usually over or undercooked.

  1. I am enjoying some soups lately too - I agree with you about lentils: they are so good for you - but making them in a crockpot can be a challenge.

  3. ps: This is too funny, Deberah - an email just came in for me for a 'Lentil Soup' recipe, in a crock pot! (It's from Healthy Recipe-for-a-Day service.)
    Now, I haven't tried it yet but I'd love to share it with you:

    Lentil Soup in a Crock Pot

    Ingredients:
    5 cups stock (ham or chicken)
    1 cup lentils
    2 large carrots (skin on), diced
    2 celery spears, diced
    1 onion, diced
    2 cups (chopped) left-over ham
    1 garlic clove, minced
    salt: to taste
    1/4 teaspoon cayenne pepper, (or, substitute to taste, cracked black-pepper)
    1 Tablespoon cornstarch mixed in 1/4 cup cool water

    Put all ingredients (except cornstarch mixture) in slow cooker, in the morning, on Medium heat.
    Cook all day, (on Medium.) About 30-minutes before serving, add in cornstarch & water mixture to pot and stir in.
