My husband's chocolate pound cake
My husband loves to cook--mostly he loves to grill but he also loves to bake an occasional cake. I must admit, he is getting quite good at it, too.
Not long ago, his sister asked him to bake a chocolate pound cake for her because her oven was not baking very well. He accepted it as a challenge and has now baked several chocolate pound cakes.
The first one was good but not chocolate-y enough. The second was very good and the third is very, very good. His entire family really appreciates his baking skills and I am impressed that he can follow a recipe and even make adjustments to make his recipe better.
Here is his recipe. I think it is great!
Jerry's Chocolate Buttermilk Pound Cake
2 sticks (1 cup) butter, softened
3 cups sugar
5 eggs
1 cup cocoa, packed
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1-1/4 cup buttermilk
2 teaspoons vanilla flavoring
Preheat oven to 325 degrees. Beat butter and sugar together in mixer until creamy. Add eggs, one at a time. Mix together, cocoa, flour, baking powder and salt in a separate bowl. Add flour/cocoa mixture alternately with buttermilk. Mix well until mixture is creamy. Add vanilla and mix well. Grease a tube pan and line bottom with parchment paper. Pour batter in pan and bake for 1 hour to 1 hour 15 minutes. Cool before turning cake out onto cake plate.
Make this, and I guarantee you your relatives will love it!
